I have a Palm that does not have a serial connection, but does have bluetooth. I would like to use it for data aquisition. The data aquisition equipment can be made to send the serial data over a bluetooth connection. Will the bluetooth connection in the Zire 72 handle this serial data stream correctly for the CS Online software to work? Or will it become corrupted?

There's more than one Bluetooth specification and some variety in equipment so we can't definitively say how your specific application will work, but CS Online fully supports Palm Bluetooth and it is commonly used just for that purpose. We use BT to a Zire 72 in house for testing in fact.
The best bet is to simply try the free trial and see if it works with your equipment.
